It's the end of summer, and everyone has tons of tomatoes. You'll find that out when
you try to give some away! So here is one way to use up a dozen for a family meal.
This recipe as is, is for 2 people, but you can increase it. You could also make
more then you need and freeze it in baggies.
Start by chopping the onion and frying it in butter with the chopped mushrooms (and
ground beef if you want a meat sauce) in a large pan. (Use high quality meat, like
chopped steak, not just 'hamburger', it will taste better.)
In the meantime, prepare some boiling water to remove the tomato skins. Put the
tomatoes in the boiling water for about a minute and then take them out and put them
in cold water. After about a minute, take them out and remove the cores with a pairing
knife, and the skins will fall right off. Also cut off any blemishes.
Put the tomatoes into a food processor and pulse-chop them for a few seconds,
they will turn to mush real quick! If you don't have a machine, just chop
them up and mash them. (Some people remove the seeds because they are a bit
bitter, but since the 'jelly' around the seeds is the most beneficial part
of the tomato, I leave them in and just add a bit of sugar.)
Add the tomatoes into the pan, along with some salt, pepper, sugar, Worcestershire
sauce, cumin powder, and garlic powder.
You can also add some of your own favorite things; thyme goes well with this, also celery.
Simmer for about ½ hour, mixing every so often.
You may want to taste it, and add more spices if you like.
Mix 1 tbsp. flour with ½ cup of COLD water until there are no lumps, and add that
to the pan. (omit this if you want a more watery, more red kind of sauce) This will
thicken the sauce and make it a more orange color, like a thick cream sauce.
Continue simmering and mixing for another 15 min. Don't let it get dry, add more
water if necessary or quit! Some people like to simmer sauces for hours, it's not
really necessary here.
That's it! Enjoy on spaghetti or linguine. The fresh tomatoes really make it taste good!
