Red Chili Con Carne Con Frijole

Ingredients:
1 can, large, diced tomatoes
1 can, very small, tomato paste
1 can, small, kidney beans
1 can, small, beef broth (or chicken)

1 cup rice

1/2 pound ground beef (or pork or chicken)
1 chopped onion

1 can, small, mushroom pieces (or fresh chopped mushrooms)

various pieces sliced hot peppers, or green pepper.

chili sauce
hot sauce
Worcestershire sauce

NOTE: Feel free to add or delete your own favorite ingredients. Some people like garlic, and even beer in their chili. You can also omit the meat products if you like, and even the beans. With the meat, it's chili con carne. With the beans it's Chili con frijole. You can sprinkle with cheese as well when serving. ( Chili con ceso )

In one large sauce pan, combine and heat the diced tomatoes, the tomato paste, the drained kidney beans, and the beef broth.

Add to this a teaspoon of chili powder and a teaspoon of cumin powder. Bring to a low boil, then simmer.

In another sauce pan, boil 1 cup of rice with 2 1/4 cups of water for 15 mins, or according to it's instructions.

In a very large frying pan, sauté the mushrooms and onion in 1 teaspoon of butter for about 5 or 10 mins, and then add and brown the meat. Add in some chili sauce, hot sauce, Worcestershire sauce, and some hot pepper slices.

NOTE: Use the hot peppers and sauce with discretion! The longer you wait to add them, the stronger they will be. You can save some to add to the finished chili for stronger flavor.

Next, add the rice to the frying pan,

then add the pot of tomato and beans to the frying pan,
combine all ingredients

cover and let simmer for a while, minimum 15 mins.

It should be ready about 45 mins after you started cooking. You can simmer it longer if you want.

NOTE: If you don't have a very large frying pan with a lid, use your largest pot for everything.

Serves about 8 people. Will keep in the fridge. Can even be frozen.

Cut large crusty French bread into think slices and toast in oven, then butter them, cover with chili, a great party snack, good with beer!
