This is one of my grandpa's favorites -- Unfortunatly you won't find chicken feet at your local general food store or market. Gelson's (In the US) Market is about the only place that I know that has chicken feet. Anywhere else you may try an ethnic market for them.
1st thing you need are the chicken feet.
Next is to use a very sharp knife to remove the toes.
Once you have removed all the toes. Throw feet into a large saucepan. I like and use Extra Virgin Olive oil to cook with. You may use lard or your favorite cooking oil. Cover the bottom of the pan with a thin light coat of olive oil.
Add your favorite spices or use a blend like Chef Paul's Seasoning Blends. Set stove to medium setting, stir occasionally, cook for 15 to 20 minutes.
Now add your favorite beer and perhaps a lime -- Good with a glass of wine as well. Here's the finished dish.
Also good with hot sauce.
